I totally see Dash as the forward and initiator of this pair, not caring the least what others think, while AJ is more prudent and would rather keep their relationship under wraps. Thus.... no PDA Dash!

Oddly enough this is how I'd see their relationship as well. Applejack maybe strong-willed and stubborn, but she's also someone more rooted in institutions like family, tradition, community...so it's not really a stretch at all for her to be more self-conscious about such things as public displays of affection with Dash if she thought people might frown on it.

Rainbow on the other hand just doesn't give a buck! :D
